THE TASTE OF MEXICAN FOOD

Nachos are a dish from northern Mexico that consists of tortilla chips often served as a snack. More elaborate versions add other ingredients and may be served as a main dish. Ignacio “Nacho” Anaya is credited with creating the dish in about 1943. The original nachos consisted of fried corn tortillas covered with melted cheese and sliced jalapeño peppers.

Quesadilla is a tortilla that filled with cheese and then it grilled. These are traditionally made with a flour tortilla and particularly in Mexico. Quesadilla combines two whole tortillas with a filling in between – a bit like a sandwich – while a half tortilla is a single tortilla folded over into a half moon shape. Quesadillas are filled with cheese, minced beef, spices and other savory ingredients such as vegetables before they are grilled. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico, Other ingredients are often added, such as savory mixes of spices or vegetables, before the quesadilla is cooked on a griddle. While there is some debate over when exactly the first taco was created, most experts state that the first taco was actually invented somewhere between 1,000 and 500 B.C. At the time, the taco was more about having an edible spoon and since has morphed into the dish that we know today. However, the name taco came much later on. The first recorded reference to the word taco, then it was tacos miners, came about in the 19th century. When they first became popular in Mexico, they were served in the silver mines. At the time, they were thin sheets of paper wrapped in gunpowder. The biggest taco ever made was constructed on November 20th, 2011 in Queretaro, Mexico. It was 246 feet long and was made with carnitas as the filling. Did you know there is a national day to celebrate tacos? National Taco day is October 4th.

Taco is a traditional Mexican dish consisting of a corn or wheat tortilla folded or rolled around a filling. Tacos are generally eaten without utensils, often garnished with salsa, chili pepper, avocado, guacamole, cilantro or coriander, tomatoes, onions, and lettuce.

Enchiladas are a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients including meat, cheese, beans, potatoes, vegetables, seafood or combinations. Enchiladas are popular dish throughout Mexico, as a rolled maize tortilla stuffed with meat and covered with a tomato and chili sauce. While soup is heart-warming and restorative, enchiladas are the food equivalent of taking off your shoes, wrapping yourself up in a blanket and sinking into a couch after a long day. When someone puts that feeling onto a plate for you, well, that’s a whole lot of love.
